    and responsible concept

    Today, the notion of sustainable development is based on three main pillars: economic, social and environmental. For several years now, a fourth pillar has been gradually added to this grand ensemble: tangible and intangible cultural heritage.

    Monument Café is fully committed to this sustainable approach, based on 5 key commitments:

    MONUMENT CAFE, a restaurant involved in the community by integrating and training disadvantaged young people through a partnership with the Apprentis d’Auteuil – many apprentices trained in our restaurants and accustomed to our high standards make up the majority of the extras who work in our restaurants.

    MONUMENT CAFE, a local restaurant, certified by Cervia, Centre Régional de Valorisation et d’Innovation Agricole et Alimentaire, to validate our “local products cooked here” approach – a label awarded by the Ile de France region.

    At each of our restaurants, we sort recyclable materials (paper, cardboard, plastic, aluminium… and now also yoghurt pots…), glass, food waste and the rest. We use very little oil (we don’t use French fries), and have it collected and processed by our service provider.

    We use eco-labeled products to maintain our restaurants and workstations during catering operations.

    We use LED bulbs (to limit electricity consumption) and aerators (to limit water consumption) in our restaurants.
